APPLE CRUMBLE ICE-CREAM SANDWICHES & salted caramel sauce

This is probably one of the best desserts I’ve ever created, I know, it’s a big bold call but what’s delicious about it is that it’s simple yet full of contrasting flavours. Layers of sweet, salty, creamy, and fresh come together in an explosion that just brings you to your knees.

Chewy oaty biscuits with a scoop of  ice-cream and apples (I’ve added rhubarb too as I had in the fridge) in salty caramel sauce take an ice-cream sandwich to another level. Make biscuits and caramel ahead of time then all you need to do is bake the fruit.

Makes 12 large cookies for 6 sandwiches (if you want them smaller, eat the extras with a cuppa the next day)

Recipe

Oat Biscuits
225g butter, softened
2 cups packed brown sugar
2 eggs
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 cups rolled oats

Baked Apple & Rhubarb
2 apples – any variety, halved, cored and thinly sliced
4 stalks rhubarb, slices into 4cm pieces
2 tbsp brown sugar
a few knobs of butter

Salted Caramel Sauce
1 cup sugar
1/4 cup water
1/2 cup cream
1/2 tsp sea salt

Pre heat oven to 190 C

For the biscuits – cream together butter and brown sugar the beat in eggs one at a time. Combine flour, baking soda, salt, and cinnamon then stir into the creamed mixture. Mix in oats and roll into balls (I used a slightly heaped dessert spoon for each) then flatten each with a fork. Bake for 10-12 minutes then allow to cool before making ‘sandwiches’.

For the baked apple and rhubarb -mix all ingredients together in a bowl and wrap as a parcel. Bake for 30 minutes or until soft.

For the salted caramel sauce – pour sugar and water in a saucepan. Bring to a  simmer over medium heat and swirl (don’t stir) the mixture until the sugar is dissolved. Without stirring, let simmer until the colour changes to light brown, about 5 minutes, then turn off heat. Slowly pour in cream and salt, allow to cool. (you can make this a few days beforehand).

To assemble scoop generous scoops of ice-cream on each biscuit, drizzle with sauce and sandwich together. Arrange rhubarb and apple on the side.
