Created for Father’s Day lunch today I’m sure you’ll agree, once you’ve tried this beef brisket burger, you’ll never go back to plain ground beef again. You’ll become a burger purist and nothing else will do thanks to the delicious marbling and incredible juiciness with each and every bite!
We brought some liquid smoke back from America and added it to mayonnaise with BBQ sauce – you can get it here in most supermarkets. It’s totally natural and gives a depth of flavour like you’ve been slaving for hours!
Serves 6
1kg beef brisket, ground (ask your butcher to do this)
Sea salt and pepper
2 medium red onions, thickly sliced into rings
2 capsicums, sliced into quarters
6 slices cheddar cheese
6 burger buns, halved
1 iceberg lettuce torn
6 gherkins sliced
3 large tomatoes sliced
Smoky sauce
1/2 cup mayonnaise
¼ cup BBQ sauce
1 tbsp liquid smoke
Mix all ingredients together until combined
Form meat into 6 patties and season with salt and pepper. Heat a frying pan on a high heat with a little oil and fry and patties 4-5 minutes on each side – add cheese slices during the last few minutes to melt. Once cooked remove from the pan and allow to rest. Return pan to the heat with a little more oil and add capsicums and red onions and fry until lightly brown on each side.
Warm buns for a few minutes then divide patties, vegetables, and smoky sauce between each one.
