EASY YET IMPRESSIVE OATY PLUM & GINGER SLAB

This is the easiest slice to make and it is even better if you have homemade plum jam. It can also be made in a tart tin and sliced into wedges served with yoghurt. Guests will think you’ve gone to a huge effort when all you’ve done is bung a few pantry ingredients in a food processor – it’s that simple. x
1.5 cups flour
1 tsp baking powder
Pinch salt
2 tsp ground ginger
1 cup brown sugar
1.5 cups rolled oats
175g butter at room temperature
300g plum jam
Pre heat your oven to 175C. Grease one 20cm square cake tin or slice tin, and line with baking paper.
Place all ingredients except the jam in a food processor and whizz until well combined -about 30 seconds.
Press 3/4 of the mixture into the bottom of the prepared pan, reserving the rest for the topping. Spread the jam over the base and sprinkle the remaining crumb mixture over the top pressing lightly.
Bake 25-30 minutes or until lightly browned. Allow to cool before cutting into bars.
