Baking Breakfast

We’re a wee bit late to the waffle party in our house. Until 2 months ago I’d never even made them. It’s been a bit of a revelation and we’ve been making all sorts over the last few weeks. I make a big batch (always in the food processor) to keep in the fridge and we even have them the odd school morning. I always sneak in things like LSA, buckwheat and chia seeds for a healthy start to the day. Here’s our favourite of the moment. PS how gorgeous is this plate and of course my littlest helper.

To a food processor blitz all ingredients until smooth (about 30 seconds)
2 cups buckwheat flour
Zest of an orange
4 teaspoons baking powder
2 tablespoons brown sugar
1/2 tsp salt
2 eggs
1 ½ cups whole milk
75g butter, melted
1 teaspoon vanilla
