Thank goodness limes have come down in price! We’ve planted a tree but I think we’ll need to wait another season for fruit (annoyingly)
I adore limes for their sharp flavour and versitility for both sweet and savoury dishes.
These chewy little morsels are utterly addictive and aren’t actually too bad for you. They’re super simple, I attempted to pretty them up with lime slices on top before baking but found they didn’t cook evenly, so I’d reccomend leaving them out. Enjoy
Makes 24 cookies
2 cups ground almonds
1 cup coconut sugar (or caster sugar)
Finely grated rind of 2 limes
2 egg whites, beaten to soft peaks
1 heaped Tbsp honey, warmed
150g white chocolate, chopped
Preheat oven to 160°C. Line 2 baking trays with baking paper. Mix all ingredients to a thick paste then fold in white chocolate. Roll small balls of the mixture and press down on the trays leaving plenty of room to spread. (Biscuits just need to be pressed down slightly). Bake for 15 — 18 minutes then cool on a wire rack — store in an airtight container.
